As a Pastry Chef at Cap Juluca, A Belmond Hotel, you are part of a team that brings culinary visions to life through immersive, unique, and hand-crafted gastronomic experiences. Primary Responsibilities Include:
• Develop, design, and create new ideas and exciting desserts to renew menu items for the Pastry Kitchen
• Produce all baked goods including but not limited to artisan breads and rolls, muffins, laminated Danish, laminated croissants, and doughnuts etc
• Oversee the overall cleaning and hygiene activities within all food preparation, refrigeration, and storage areas in accordance with local Health Department regulations and resort guidelines
• Oversee the overall implementation of procedures and production processes to run a professional and systematic kitchen operation and give all the tools and training to the staff for them to direct their efforts toward exceptional and complete guest satisfaction, employee productivity, compliance to brand standards, and hotel profitability
• Maintain inventory and cost control by planning menus with quality ingredients within the budgetary restrictions
Requirements
What You Bring:
• A two-year degree from an accredited university in Culinary Arts, Hotel and Restaurant Management, or a related major
• Minimum of five (5) years previous experience as Executive Pastry Chef or equivalent for a premier luxury Hotel or resort with particular emphasis on creation and implementation of high-end, luxury products
• A clear understanding of a pastry operation, strategy, and design in a luxury dining environment
• Expert skills, ability, and creativity in different types of pastry, dessert, cake decorating and baked goods
• Excellent Communication, Interpersonal, Organizational Skills
